Scrambled Eggs in the Microwave

Good Morning! November is here, and hopefully the leaves will start changing soon so we can have the scenery to match this cool weather!

On the schedule for today was: MILE REPEATS wooo! (I can say that now that they are over lol)

Warm up: 3 mile warm up at about 7:20-7:30 pace


Workout: 4x 1600(thats a mile for those who don't know) starting at 5:45 pace and                    working down. With 3 minute rest.


Mile one: 5:46 
Mile two: 5:42
Mile three: 5:35
Mile four: 5:30 


Cool Down:2 mile cool down at about 7:30 pace 


Breakfast: 




Today for breakfast, I had a bagel with egg and cheese and salsa on top with a side of banana.  
The eggs for this sandwich, were made in the microwave! Most of my roomies last year thought I was crazy when they saw me putting eggs in a mug in our microwave and had never heard of this easy egg strategy before.  So today I will share with you one of the amazing shortcuts on time (and cleanup!). Cooking eggs in the microwave!

All you need is eggs and a mug!




Crack your eggs (probably one or two) and get to scramblin' 




Cover your mug with a paper towel (HINT: this is the most important step! Or else you will have exploded egg to clean up!) and put it in the microwave for about 45 secs- a minute. (I would start on the lower end first, to see how your microwave cooks. You can always put them back in for longer!)








And finally TADA! Easy, Simple, Fast, scrambled eggs :) and the only clean up is the mug!
