Healthy Cookie Dough?!

Lets start this off with how the day started,

Running for the day:
The workout today went average at best, it was very windy on the track this morning, and it was difficult for some reason to hit my times. 
AM- Workout: 6x 800s with 2 min rest at 2:40-2:35 pace 
2 miles warm-up
6x800 on the track (my times ranged from 2:45-2:40) 
1 mile cool down


PM - 3 recovery miles 


Side note: I ran in my spikes today (pictured on the blog yesterday) for the first time, other than strides.  I was so excited to lace them up and get to running in them, I knew my last two 800s would be a breeze! But when I put them on...it was awful! I have not ran in spikes since I was 17 and to say they will take some getting used to is a hefty understatement! 


Now on to one of my most favorite subjects (other than running!) COOKIE DOUGH!


It was absolutely imperative that I make a Wal-mart run today, I was out of
-Shampoo,
-Conditioner,
-Nutrogena stuff,
-razors,  You know, all the things a person needs for typical hygiene ;)
So before I headed out my door, I decided that I would treat myself and buy the ingredients for this "healthy" cookie dough recipe that I found on Pinterest, that I have been dying to make.

I originally borrowed this recipe from another blog called "Chocolate Covered Katie" whos claim to fame is healthy tasting desserts, that don't taste like you're eating healthy food.

Cookie Dough Dip
Here is the recipe: (I don't know if I would immediately go straight to the word healthy, but better than regular cookie dough for sure!)

(This really looks more brown than regular cookie dough, but its because of my Peanut butter and brown sugar additions!) 

- 1 1/2 cups of chick peas
- 1/8 + 1 1/16 tsp. salt
- 1/8 tsp. baking soda
- 2 tsp Vanilla extract
- 3 Tbl of Peanut butter (this will give it a pb taste, Katie's directions calls for 1/4 cup of nut butter, but I didnt have that waiting in my pantry and LoVe pb anyway so no problem for me there!)
- 2/3 cup of brown sugar
- 1/3 cup of chocolate chips (I added more!)

-Add all ingredients (except for chocolate chips) to a blender or food processor, and blend until very smooth. Then mix in the chocolate chips.


(Katie has optional in hers: 
  • up to 1/4 cup nondairy milk (Start with 1 T, and add more as needed)
  • 2 to 3 T oats (or flaxmeal) (You can omit, but also omit the milk if you do) I would like to try these extras next time and see the difference they add!

Tonight we watched the t.v. show Last Man Standing on Hulu.



Adam really wanted to start watching it when he saw the previews with Tim Allen this summer, and being the supportive Fiancee I am ;) we have been watching it the past few weeks and it finally showed a slight glimmer of hope with the comedy tonight!


Off to bed ready for the biting cold that is sure to come tomorrow!
